New York Style Pizza Dough Recipe

Ingredients: 4 1/2 cups flour 1 1/2 cups warm water 1 1/2 tbsp sugar 2 1/2 tsp salt 1 pkg (2 1/4 tsp) dry active yeast 1 1/2 tbsp olive oil

Directions:I use my Kitchen Aid mixer. Warm to about 100º F. Dissolve sugar in water. Sprinkle yeast over water and let sit until yeast starts to bloom. Add in salt and oil. Add in one cup of flour at a time and mix until well blended. Knead in mixer until all flour is all incorporated into a soft dough. If dough feels sticky add in a little extra four as needed. Place dough into a floured surface and knead a few times until the dough is smooth. Cut into 2. Roll dough into a nice balls and place on an oiled cookie sheet. Oil the tops of the dough, cover with plastic and put in fridge overnight. Bring out and let rise a couple hours then make 2 15” pizza crusts. Alternatively, divide dough in portions before proofing overnight and wrap with plastic wrap and put in zipper freezer bag and freeze. When ready to use thaw in fridge overnight and rise in oiled bowl. The overnight proofing in the fridge is what gives this dough a nice soft texture.
Top with all your favourite toppings and bake at 450* for 15 - 20 min on the very bottom rack. I like to give it a few minutes for the crust to rise a little for a nice fluffy crust before baking. Check bottom crust to make sure it is brown. And leave it bake until the cheese gets a little browned on top. Take it out let it set up about 10 minutes before cutting. |
