5+ c. sugar 1 c. cornstarch
2 tsp. cinnamon 1/4 tsp. nutmeg
1 tsp. salt 10 c. water
1 tbsp. vanilla 2 tbsp. lemon juice

Directions:
Directions:
Pack 5 1/2 to 6 lbs. tart apples into jars. Leave 1" at top. Mix together sugar, cinnamon, nutmeg, salt, and then add water, vanilla, and juice. Cook syrup just until it comes to a boil, otherwise it will be too thick & won’t pour down through apples. Leave 1/2” at top. Seal & cold pack for 20 min. (pints), or 25 min. (quarts).
