1 spaghetti squash, halved lengthwise and seeded
2 tablespoon vegetable oil
1 onion, chopped
1 clove garlic, minced
1 1/2 cups chopped tomatoes
3/4 cup crumbled feta cheese
3 tablespoon sliced black olives
2 tablespoon chopped fresh basil

Directions:

1) Preheat oven to 350ºF.
2) Place spaghetti squash cut sides down on cookie sheet, bake 30 min or until knife can be inserted with only a little resistance. Remove squash from oven and set aside to cool.
3) Heat oil in skillet over medium. Saute onion until soft, add garlic and saute 2-3 min. Stir in tomatoes and cook until warm.
4) Scoop pulp from squash with large spoon and place in medium bowl.
5) Toss with sauted vegetables, feta, olives, and basil.
