Ingredients: 1 bell pepper (any color or a combination of colors) 1/2 onion 1 garlic clove, minced or chopped 1/2 jalapeno (optional if you like very spicy) 1/2 cup frozen corn (optional) 1 cup baby spinach 1 tablespoon olive oil Any blend of spices such as cumin, cayenne pepper, thyme, Cajun spice, etc. salt & pepper to taste 1 can black beans or beans of your choice Corn tortillas Salsa, guacamole

Directions:1) Cut up bell pepper, onion and garlic. Heat oil over medium-high heat in skillet and throw in garlic, onion, bell pepper and jalapeno if using. Sprinkle liberally with spices of your choice and stir. 2) While veggies are cooking warm beans in a small pot on the stove and add in some chili powder or any other seasonings you like. 3) After veggies start to soften throw in corn. 4) Add spinach just before it's ready, it only takes about a minute to cook. 5) When veggies are done and beans are warm, heat up a couple corn tortillas and layer with veggies, beans, and salsa and/or guacamole. *One thing you might try with this recipe is to buy some Soy Curls, rehydrate them in faux chicken flavoring while you're chopping up the vegetables, and throw them in when you add the corn. This adds another flavor and texture to the dish. I buy the Soy Curls & faux chicken bouillon cubes from www.veganessentials.com but you can probably buy them in health food stores too. |
