1 box of lasagna noodles
1 jar spaghetti sauce
2 sm zucchini
1 bunch of fresh spinach
1 lb fresh sliced mushrooms
Parmesan Cheese
Ricotta cheese (low fat or regular)
1 pkg Mozzarella cheese

Directions:
Directions:
Boil noodles - always make more than you need- they fall apart.

Layers - bottom up: Spaghetti sauce, Noodles, Ricotta
Zucchini, Spinach, Mushrooms, Mozzarella, Parmesan
Repeat until pan is full.

Top with Mozzarella and parmesan cheese. Bake at 375 degrees for 45 minutes or until cheese is golden brown. Let sit for 15 minutes before serving.
