1- 16 oz can cannelloni beans or other white beans
1- 16 oz. can chickpeas (garbanzo beans)
1- 16 oz can lima beans
1- 16 oz can kidney beans
1- 16 oz can baked beans
6 bacon slices
2 cups onion, chopped
1/2 cup packed brown sugar
1/2 cup cider vinegar
1 tsp. dry mustard
1 garlic clove, crushed
cooking spray

Directions:

Preheat oven to 350º. Drain beans in colander over bowl, reserving 1 cup liquid. Set aside. Cook bacon in skillet over medium heat. Remove bacon and crumble, reserving 3 T. drippings in pan. Add onion to drippings and cook 10 minutes until golden brown. Stir bacon, sugar and remaining ingredients. Cook over low heat until thick and bubbly (about 15 minutes). Combine beans, reserved liquid and onion mixture and salt to taste in a 3 quart casserole sprayed with cooking spray. Cover and bake 45 minutes stirring every 15 minutes.
