3 1/2 cups raw scallops, fresh or frozed
4 cups shrimp, precooked
4 tbsp butter
2 or 3 garlic cloves, crushed
1 stick butter
3/4 cup flour
2 tbsp curry powder
6 cups cooked wild rice
2 tbsp vinegar
2/3 cup milk
4 1/2 cup more milk
1/2 cup dry sherry, optional
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cayenne pepper
3 chicken bouillon cubes
2 tsp salt
5 tbs chopped parsley

Directions:
Directions:
Cut scallops into small pieces. Use small shrimp or cut large ones into chunks. Melt 4 tbsp butter in a skillet; add scallops and garlic and cook 5 minutes, stirring often. Melt 1/4 pound butter in large saucepan and stir in flour. Stir curry powder with vinegar in a measuring cup. Fill cup with milk and add this and 4 1/2 cups more mild to saucepan. Add ginger, nutmeg, cayenne pepper, beef powder, and salt. Cook, stirring constantly, until sauce has boiled1 minute. Add parsley. tast, and add more seasoning if it is needed. Curry should be fairly strong and garlic tasted faint but definitely there. Make day before and reheat. Serve over rice, with additional parsley, chopped eggs, boiled eggs, diced onion, crunchy bacon, and chutney

Everyone always loves this. The combination of flavors. This is an old recipe from Grandma Margaret.We always serve it over wild rice.
