Mama's Chocolate Fudge Cake Recipe

2 cups sugar
4 tbsp. cocoa
1 cup water
2 eggs, beaten
1 tsp soda
2 cups flour
1/2 cup Wesson oil (slight)
1 stick butter
1/2 cup buttermilk
1 tsp. vanilla

Directions:
Directions:
Combine cocoa, water, oil and butter. Put in saucepan and bring to a boil. Pour over flour and sugar. Put soda into buttermilk. Mix in beaten eggs and vanilla. Stir in buttermilk. Mix well. Pour in greased and floured sheet cake pan. Bake at 375º for 40-45 minutes or until tester comes out clean. Frost while hot.

Frosting:
1 box powdered sugar
1 stick butter
4 tbsp. cocoa
4 tbsp. milk
1/2 cup chopped pecans


Bring cocoa, butter and milk to a boil over low heat. Pour over sugar and mix well. Add pecans and pour on cake while hot.

Pecans can be added on top of the cake instead of mixed in with the frosting or you can omit them altogether. This recipe was given to my mom by a neighbor, Maxine Welch, when I was 11 years old and we lived in Pasadena, This cake is a favorite of just about everybody I know. Letretha, Neima, Rhett, James and Brenda Hudson requests it most often.
