1/2 cup brown sugar
1/2 cup ketchup
1 1/2 lb. ground beef
3 cloves garlic, minced
1/2 cup soy milk
1 T. ground flax seed + 3 T. HOT water (mix and let stand for 10 minutes)
1/4 cup celery, finely chopped
1 1/2 T. salt
1/4 T. ground black pepper, or to taste
1 onion, finely chopped
1 cup cracker crumbs

1. Preheat oven to 350ºF. Lightly grease the tins in a muffin pan.

2. Press a small amount of the brown sugar in the bottom of each tin of the pan (dividing equally between the tins) and spread the ketchup over the sugar in each.

3. In a bowl, mix thoroughly all remaining ingredients.

4. Place meat mixture on top of the ketchup and sugar, filling each muffin cup to the top.

5. Bake in preheated oven for 30 minutes or until juices are clear. Serve.

If desired, substitute the flax seed and water with one egg. You can also substitute regular milk or rice milk for the soy milk.
