1 c. flour
1 T. sugar
2 tsp. baking powder
1/8 tsp. salt
1 c. soy milk
4 T. vegetable oil

Directions:
Directions:
1. In a large bowl, sift together the flour, sugar, baking powder, and salt. Pour in the milk and oil; mix until smooth.

2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

You could substitute regular milk or rice milk for the soy milk in this recipe.
