French Onion Soup with Croutons Recipe

4 T. butter or margarine 2 T. olive oil 2-3 lbs. onions, thinly sliced 1 t. salt 3 T. flour 1 Large can College Inn (or your favorite) chicken broth 2 t. sugar Gravy master Accent 2 shakes Worcestershire sauce
1 c. grated Swiss or Parmesan cheese (to serve with soup)

Loaf of French bread, thickly sliced. 2 T. Olive oil 1 clove garlic, cut

Directions:In heavy 5 qt. saucepan, melt butter with oil. Stir in onions and 1 t. salt. Cook over low heat, uncovered for 20 -30 minutes. (until a rich brown) Stir occasionally. Add sugar and saute 5 or 10 minutes more. Sprinkle flour over onions then cook stirring a few minutes more. Add chicken broth and simmer partially covered 30 to 40 minutes. Add Gravy Master to color golden. (about 2 to 3 teaspoons) Add more salt and pepper, if needed. Accent if desired. Add Worcestershire sauce.
While soup is simmering, make croutons. Preheat oven to 325º Bake bread slices on cookie sheet about 15 minutes. Remove from oven and coat both sides of each slice with oil, using a pastry brush. Turn slices and bake an additional 15 minutes until dry and browned. Remove from oven and rub each slice on both sides with garlic. Top each bowl or crock of soup with a crouton and desired cheese. (Store croutons in a sealed bag.) |
