1 pound frozen corn kernels
12 ounce whipping cream or heavy whipping cream
1/2 teaspoon salt
2 tablespoon granulated sugar
Pinch white pepper
1 1/2 tablespoon melted butter
1 1/2 tablespoon all-purpose flour
3 tablespoon freshly grated Parmesan cheese (do not substitute shelf-stable grated parmesan cheese)

1) Adjust oven rack 6 to 8 inches below broiler element. Preheat broiler.
2) Combine corn, cream, salt, sugar and white pepper in a large saucepan and bring to a boil. Simmer 5 minutes.
3) Melt butter in a medium saucepan on medium heat. Add flour and stir for 1 minute. Add butter-flour mixture to corn, mix well and remove from heat.
4) Transfer corn mixture to casserole. Sprinkle with Parmesan cheese and brown under broiler.

Substitutes for whipping cream: Mix 1/3 cup softened butter with 3/4 cup milk for a whipping cream substitute OR Chill 13 oz. of evaporated milk in the refrigerator overnight, or at least 12 hours. Combine the chilled evaporated milk with 1 tsp. lemon juice and beat with an electric mixer.
