2 cups all-purpose flour
2 cups milk
2 large eggs, beaten
1/3 cup butter, melted
2 tablespoons granulated sugar
2 teaspoon baking powder
1/2 teaspoon salt

Directions:
Directions:
1) In a large bowl combine flour, milk, beaten eggs, 1/3 cup melted butter, sugar, baking powder and salt until just blended.
2) Preheat a non-stick skillet, or an electric frying pan to 350°F.
3) Pour about 1/4 cup of batter into pan per pancake. Cook until bubbles just begin to pop and sides appear dry. Flip once; cook for 1 to 2 minutes longer or unitl golden brown.

Pancakes are great anytime of day- and are a favorite late-dinner meal of mine. Throw together some pancakes, veggie sausage and cook up a couple of eggs and you have a great meal! (PS- this is a great substitute for Bisquick or other pancake mixes!)
