19 oz firm tofu
1 cup green pepper, diced
1 cup carrot, sliced
1/2 cup onion, diced
1/2 tsp salt
flour for coating tofu

Sauce:
1/2 cup water
2-1/2 Tbsp sugar
1 Tbsp vinegar
2 Tbsp ketchup
1 Tbsp soy sauce
1 tsp corn starch

Press the water out of the tofu by wrapping it in cloth or paper towels and pressing it to force the excess water out. Set tofu aside. Meanwhile, combine all ingredients for the sauce into a bowl and save for later. Slice the tofu into 1/2" cubes. Heat the oil in a wok. Lightly coat the tofu with flour, and using a spatula, gently lower the tofu into the hot oil. It is important not to coat the tofu in advance of heating the oil or it will become very sticky. Deep-fry tofu for 4 minutes or until lightly browned. Remove with a slotted spoon and rest on paper towels. Remove oil from pan and stir-fry the vegetables with the salt in the pan. Cook for 3 minutes. Add fried tofu cubes and the sauce mixture. Cook until the sauce thickens.
