Basmati rice
2 tbsp. olive oil
1-2 carrots, shredded or finely diced
1 (28 oz) can diced tomatoes, with juice
2 (14.5 oz) cans chickpeas, rinsed and drained
2-3 tbsp. shredded coconut
1 tsp. ground coriander
3/4 tsp. cinnamon
1/2 tsp. cumin
1 tsp. salt
3/4 c. plain yogurt (regular or greek style)

1. Cook rice according to package directions.

2. Heat olive oil in a large skillet over medium-high heat. Add carrot, tomatoes, and chickpeas. Cook until carrots are tender, stirring occasionally, about 10 minutes.

3. Stir in coconut, spices, salt, and yogurt. Reduce heat to low and cook about 5 minutes until heated through.

Serve with basmati rice.
