1 c. whole wheat flour (preferably stone ground by hand)
1 c. pancake mix
1 c. powdered skim milk
1 c. cottage cheese
1/2 c. yellow cornmeal (carefully remove larvae and cocoons)
1/2 c. oat bran
1 t. baking powder
1 t. soda
3 c. buttermilk
3 eggs, separated (tofu substituted for eggs voids the warranty)
canola or corn oil

Put dry ingredients in big mixing bowl. Put buttermilk, cottage cheese, egg yolks, oil in blender, blend. Sir wet stuff into dry stuff, adding water if necessary until fairly but not overly consistent. A foolish consistency is the hobgoblin of little minds. Beat egg whites until firm but not stiff. Fold beaten egg whites into batter. Fold, but don't increase (if you don't know how to fold egg whites, it is ok to stir them in gently). Spray cold waffle iron with no stick stuff, plug iron in. Turn iron on. Set dial. Wait. Batter up. 1 c. of batter should make Foursquares. That church was once just a waffle club. How fundamental can you get? Add batter to heated iron, close iron lid. Bake. This quantity makes several waffles. Serve.
Suggested toppings: butter, oleo, sour cream, whipped cream (please, no spray can), yogurt, hot maple syrup, honey, molasses, brown sugar, powdered sugar, boysenberry syrup, hot applesauce, strawberries, raspberries, blueberries, peaches, peanut butter, creamed tuna, creamed chipped beef, scrambled eggs, salsa, guacamole, etc., but not all on one waffle.
Sides: ham bacon, Canadian bacon, corned beef, fried tofu cubes.
Freeze uneaten waffles, thaw later and discard.
