1 med onion, chopped
2 cloves garlic, minced
2 tbsp. olive oil
1 green pepper, chopped
2 small can chopped green chilies
1 (28oz) can diced tomatoes w/ juice
1 (28oz) can tomato sauce
1 (6oz) can tomato paste
3/4 c. bulgur
1 (12oz) can or bottle beer
1 tbsp. lemon
1/8 tsp. hot pepper sauce or to taste
4 tbsp. chili powder or to taste
1 tbsp. mustard powder
1 tsp. dried oregano
1 tsp. ground cumin
1 tsp. basil
1/4 tsp. red pepper flakes
salt to taste
freshly ground black pepper to taste
1 (14.5oz) can black beans
1 (14.5oz) can garbanzo beans
1 (14.5oz) can pinto beans
1 (14.5oz) can kidney or red beans
1 (14.5oz) can white beans
1 c. frozen corn, thawed

1.Bring 1 cup of the tomato sauce to boil over medium heat. Remove pan from heat and stir in bulgur. Let bulgur sit and soak up the liquid.

2. Drain and rinse the beans. Saute onion and green pepper in oil until soft, then add garlic and chili peppers. Saute a few minutes more.

3. Transfer to a crockpot and stir in the beans, corn, and bulgur. Add the diced tomatoes, remaining tomato sauce, tomato paste, beer, and all seasonings. Stir well.

4. Turn crockpot to high and let simmer for 30 minutes. Reduce to low and leave until ready to serve. Serve with shredded cheddar cheese, queso fresco, Italian bread, or cornbread.
