Cheater's Spanakopita Recipe

1-2 tbsp. olive oil
30 oz. chopped frozen spinach, thawed
1 c. yellow onion, finely chopped
pinch nutmeg
8 oz. fat-free egg substitute (or 4 whole eggs)
6 oz. feta cheese, crumbled
2-3 tbsp. grated Parmesan cheese
salt and pepper to taste
1 package frozen puff pastry sheets, thawed according to directions

1. Coat a 9x9-in. square baking pan with cooking spray.

2. After thawing spinach, remove as much excess water as possible either by pressing with the back of a spoon in a fine metal colander or by wringing out excess in clean cheesecloth.

3. Heat oil in a large skillet over medium-high heat. Add spinach and onion and cook until liquid is absorbed and onion is slightly translucent- about 5-7 minutes. Stir in nutmeg. Remove from heat and transfer mixture to a large bowl. Add egg substitute (or whole eggs, beaten), cheeses, and salt and pepper. Mix well.

4. Lay one sheet of pastry on the bottom of baking dish, allowing excess to come up the sides of the pan. Spread spinach mixture over pastry. Lay second sheet of pastry over top and roll edges in so there is no pastry overhanging.

5. Refrigerate for at least 30 minutes or until ready to bake.

6. Preheat oven to 375° F. Bake until crisp and golden, about 45 minutes. Let stand 5 minutes before cutting and serving.

(This recipe freezes well. I freeze our leftovers individually sliced and ready for my husband's lunches!)
