2 lbs.ground beef
1 clove garlic
1 large onion finely chopped
1 tbsp. chili powder
1/2 tsp. cumin
1 tsp. salt
1 dozen corn tortillas
2 cups grated cheddar cheese
1 can (10 oz) Las Palmas enchilada sauce
2 cups sliced olives

Directions:
Directions:
Saute ground beef, onions and garlic in oil until crumbly and well cooked. Add tomatoes, chili powder, cumin, and salt simmer for about 20 minutes. Butter tortillas and place four on bottom of 13x9 pan; spread 1/3 of meat mixture; 1/3 enchilada sauce, olives and cheese. Continue until you have 3 layers.
Cover and cook at 375º for 15-20 minutes until heated through.
