4 boneless, skinless chicken breasts (or 1 for each salad you are making)
1 onion, chopped
1 tomato, diced
1/2 jalapeņo, chopped
1/2 teaspoon salt
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1 can black beans, drained
1 can whole kernel corn, drained
1 avocado, sliced or chopped (your preference)
tortilla strips
lettuce of your choice
1/2 cup shredded colby jack cheese

Directions:

Cook chicken on the grill until done, then cut into strips. In a medium saucepan, cook black beans and corn (you can choose to cook them separately if you want). Combine onion, tomato, jalapeņo, then add salt, chili powder, and garlic powder and mix all together. Chop or shred lettuce to your liking, and put in salad bowl. Add a couple spoonfuls of the onion/tomato/jalapeņo mix. Sprinkle on some cheese. Add chicken, black beans, and corn. Top with tortilla strips, avocado, and dressing of your choice. Enjoy!
