16 oz of white mushrooms
8 Leeks
2 medium potatoes
2 Tbsp salted butter
Chicken broth
Salt
Pepper
Homogenized milk or cream

Directions:
Directions:
1. Chop up mushrooms and white portion of leeks and sautee in butter for 5 minutes.

2. Transfer to deep pot. Add chopped potatoes.

3. Cover vegetables comfortably with chicken broth.

4. Bring to a boil. Add a small pinch of salt and pepper. Turn down temperature to a simmer for 45 minutes.

5. Let cool.

6. Blender contents until smooth. Add a small amount of cream or milk to taste.
