10-12 bundles of collard greens
1 lb. salted pork
2 tbsp. sugar
1 tbsp. baking soda
1 quart of water

Directions:
Directions:
Before being cooked collards need to be washed and rewashed several times. Once washed cut out stems, roll collard leaves and cut in large bite size pieces. Fry salted pork to render fat. In a large pot combine the greens, fat from salted pork, sugar, baking soda and water. Boil slowly until tender which is less than 2 hours. Watch closely not to over cook.

This is the recipe I use for New Year's Day Party. Collards are best cooked at least the day before. Just remember cleaning the collards takes a long time so make sure you have a full day. If you just want collards for a family dinner just use 2 to 4 bundles and adjust pork fat to taste.
