Ingredients: 1 pound broccoli 1 (l2 oz.) package bow-tie pasta, uncooked Versatile Vinaigrette:* 1 (10 oz._ package fresh spinach 1 pound smoked turkey breast, cut into thin strips 1 pint cherry tomatoes, halved 1/2 cup chopped fresh basil 1/4 cup chopped fresh parsley 1/3 cup pine nuts, toasted
*Versatile Vinaigrette: 2/3 cup vegetable oil 1/4 cup white vinegar, 1/4 cup water, 1 1/2 tsp salt, 1 Tbsp freshly ground pepper 1 clove garlic, pressed. Combine all ingredients in a jar, cover tightly and shake vigorously. Yield l cup

Directions: Remove broccoli leaves, and cut off tough ends of stalks; discard. Wash thoroughly, and cut into 1-inch pieces. Cook broccoli in boiling water to cover, 1 minute; drain immediately, and plunge into ice water to stop the cooking process. Drain and pat dry with paper towels; chill. Cook pasta according to package directions. Drain; rinse with cold water, and drain again.
Combine pasta and versatile Vinaigrette, tossing to coat. Place in a large heavy-duty, zip-top bag. Chill 2 hours, or overnight. Remove stems from spinach; wash leaves thoroughly, and pat dry. Combine spinach, pasta, broccoli turkey, and remaining ingredients, tossing gently.

Notes: For ease in preparation--Cook broccoli and pasta ahead, and chill until ready to assemble the salad. Prepare other salad ingredients, and store in individual plastic containers.
