2 tablespoons of olive oil
1 small onion, peeled and chopped
2 to 3 gloves of garlic, peeled and chopped
1/2 cup of low-sodium chicken stock or veggie stock
1 16 ounce jar roasted red peppers, drained and chopped
1 cup of crumpled feta cheese or a 6 oz block
1 pound of whole wheat fettuccine noodles
Fresh ground pepper
2 tablespoons chopped fresh parsley leaves ©

Heat the oil in a heavy skillet over medium heat. Saute onion and garlic until soft (no more than 10 minutes). Add roasted peppers until heated through. Remove from heat and cool slightly. Mix with the fettuccine noodles that have been prepared according to the package. Mix until smooth (about 30 seconds). Season with salt and pepper to taste.
