1 large onion chopped or 2 small
2 stalks of celery chopped
4 carrots cleaned and sliced
2 c. fresh or frozen green beans
2 c. fresh or frozen kale
2 c. chopped cabbage
2 c. chopped broccoli
1 qt. stewed tomatoes or juice
1 c. chopped parsley
salt and pepper to taste
2 T. chicken base

Wash and chop all vegetables and add to a large soup pot. Add water so it is double volume of vegetables. Add soup base and cook slowly until tender,
With a hand held blender puree until soup is smooth. Taste and add salt and pepper to taste. I add 2 T. vinegar to brighten flavor.

This is a soup I prepare and store in quart jars in the ref. or freezer. I have a bowl of this everyday for lunch. It fulfills my daily requirement for vegetables, also providing many nutrients, antioxidants and fiber.
