400 grams of finely chopped fresh or frozen mallow leaves (can be found at Adonis)
2 cups of chicken stock


Molokheya spice mix:

1 tbsp of ground dried coriander
3 cloves of minced garlic
1 tbps of oil

Directions:
Directions:
1. Place 400 grams of finely chopped fresh or frozen mallow leaves in two cups of chicken stock and cook over a low fire.

2. In the meantime prepare the molokheya spice mix by frying a tablespoon of ground dried coriander and three cloves of minced garlic in a tablespoon of oil in a separate pan until golden brown.

3. Right before the molokheya and the stock start boiling, place the spice mix in the mixture and immediately remove from the fire.

It is very important not to allow the molokheya to boil as it coagulates and becomes inedible.

The resulting molokheya dish can be served on white rice with chicken, seasoned with freshly chopped onions in red wine vinegar and topped with oven dried pita bread chips.
