7 cups/1.75L rhubarb – cut into 1 inch pieces (takes about 6 stalks to make 4 cups)
3 large cooking apples-peeled & finely chopped
2 cups/500ml – granulated sugar
¼ cup/50ml – orange juice
1Tbsp/15ml – grated orange rind
4 cups/1L strawberries (hulled & cut in half)

Directions:
Directions:
Combine rhubarb, apples, sugar, orange juice & rind in a large stainless steel or enamel saucepan. Bring to a boil; boil gently 10 to 15 minutes or until rhubarb is soft. Add strawberries to rhubarb; boil gently to 212 degrees F. (100 C).

Fill big canner with water, place 500 ml jars in canner, bring to a boil add snap lids in boiling water and boil for 5 minutes to soften sealing compound.

I make this every year and keep 500ml jars of this filling on hand. Also good warmed up and poured on vanilla ice cream
