8 hard boiled eggs - large
8 strips bacon - crumbled
1 small onion or shallot
1 stalk celery including leaves
1/2 - 8oz package cream cheese, room temp
1 1/2 cup mayonnaise
1 tsp parsley chopped
1 tsp tarragon chopped
1/2 tsp salt
1/2 tsp pepper
1/2 cup toasted almonds
paprika

Lettuce optional
Tomato optional
Hearty bread optional

Directions:
Directions:
Hard cook, peel & chop the eggs. Fry & crumble bacon. Chop onion & celery. Combine all ingredients except the toasted almonds & paprika, with cream cheese & mayonnaise. Chill to blend flavors. Before serving add toasted almonds & paprika to taste.
Serve on hearty thick cut bread with lettuce & tomato. You can put a little dab of mayonnaise or mustard on the bread before adding the lettuce. Some prefer the bread to be toasted.
OR
Some serve in a lettuce cup with assorted cut fruit & muffins.

I've used dried fruit such as cranberries or cherries. Fresh herbs makes a difference. A very rewarding sandwich, or nice for a small luncheon or get together.
