1 c. breadcrumbs
1/2 c. flaxseed meal
1 tbsp. grated Parmesan
1/2 tsp. paprika
1/2 tsp. garlic powder
1/2 tsp. onion powder
1 c. milk
1 large egg-lightly beaten
1 lb. boneless/skinless chicken-cut into small chunks
1/2 tsp. salt
1 tbsp. olive oil
nonstick cooking spray

Directions:
Directions:
Combine first 6 ingredients in a bowl and mix well with your fingers. In a shallow bowl, beat egg with a fork and add milk. Sprinkle chicken with salt. Dip the chunks into the egg mixture and then into bread crumbs until completely coated. Coat a large nonstick skillet with cooking spray and set over medium-high heat. When the skillet is hot, add the olive oil. Place chicken in the skillet in a single layer and cook until crisp and golden on one side (3-4 mins). Turn and cook another 4-5 mins longer, or until chicken is cooked through.
