2 lb. yellow squash, sliced
salt and pepper to taste
1 10 3/4 oz. can cream of chicken soup, undiluted
12 oz. jar diced pimento, drained(optional)
2 carrots, grated(optional)
1 8oz. carton of sour cream
1 small onion, chopped
1/4 cup melted oleo
1 1/2 cups seasoned breadcrumbs

Directions:
Directions:
Cook squash in a small amount of boiling water until tender. Drain well and mash. Add salt and pepper. Combine soup, pimento, carrots, onion, sour ream and oleo, blending well. Add squash, stirring gently. Alternate layers of squash mixture & breadcrumbs in a lightly greased 2 qt. casserole.

Bake 350º for 30 min. or until bubbly.
