Pastry for a double-crust 9-inch pie
6 C peeled and sliced cooking apples (I like Cortlands)
1 T lemon juice
½ c sugar
½ c brown sugar, firmly packed
2-3 T flour
½ tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 T butter or margarine

Directions:
Combine apples and lemon juice in large bowl. Combine sugars, flour, cinnamon and nutmeg in a small bowl, mixing well. Spoon sugar mixture over apples, tossing gently. Spoon filling evenly into pastry shell and dot with butter.

Transfer top of pastry to top of filled pie shell. Trim off excess pastry along edges; fold edges under and flute. Cut slits on top of pie crust for steam to escape.

Bake at 450 degrees for 15 minutes; reduce heat to 350 degrees and bake an additional 35 minutes or until crust is brown and apples are cooked.
