Grandma Dora's Pesach Noodles Recipe

4tbs water
4tbs potato starch
1/2tsp salt

Beat eggs. Add other ingredients to make a smooth batter.

Use butter (Milchig) or margarine (Paerve) to grease a small frying pan over medium-low heat. Use a small amount of batter (approx. 1tbl) to coat bottom of pan, swirling batter to cover entire surface as quickly as possible. Cook until just set, flip, and cook again until lightly browned.

Turn out onto plate and repeat until all batter has been used.

When cool, roll each pancake and slice into 1/4" wide slices on the short end. Separate noodles and use in chicken soup.

There were two things I really looked forward to at Pesach - Tsimmes and Grandma's Pesach Noodles! It was my job to get them out of the pan, and get the pan ready for another round of batter while Grandma kept another one going.....we had quite the system! It was also my job to roll and slice the pancakes when we were done, and I was always rewarded with extra noodles in my soup!
