5 Eggs, Separated
1 c. Sugar
1 tbsp. Instant Coffee (or Granules)
½ c. Sifted All-Purpose Flour
½ c. Hazelnut or Walnut Meats, Finely Ground

Filling:
2 c. Heavy Cream (1 pint)
2 tbsp. Confectioners Sugar
1 tbsp. Instant Coffee, Dissolved in
1 tbsp. Rum or Brandy

The Preparation:
Grease and flour a 9" tube spring form pan.
Put three 10" pieces of wax paper and a flat cake plate on a table.
Preheat oven to 325º.

The Method:
Beat egg whites until soft peaks form. Add sugar gradually until stiff. Beat egg yolks separately until thick and light. Fold yolks into whites.

Stir together coffee, flour, and ground nuts. Gently fold dry ingredients into wet thoroughly until no white streaks remain. Spoon into pan. Stir to remove air bubbles.
Bake 50-55 minutes. Remove cake from oven and let sit 10 minutes. Remove from pan and cool on rack.

While cake is baking, whip cream until thick. Blend in sugar. Blend in coffee/brandy mixture and stir until smooth.

The Assembly:
Split cake into 4 layers, placing 3 on wax paper and bottom layer on cake plate. Cover bottom and two layers with equal amounts of cream. Top with final layer of cake and dust with confectioners' sugar.
