1 tsp. grated lemon rind
1/4 cup butter
1/2 cup sugar
2 egg yolks, well beaten
3 tbsp. lemon juice
2 tbsp. flour
1/4 cup grape nuts cereal
1 cup milk
2 egg whites, stiffly beaten

Lemon Sauce:
1/2 cup flour
1 cup sugar
2 lemons--juice of both and grated rind of one
2 eggs
pinch of salt
2 1/2 cups hot water

Directions:
Directions:
Cream lemon rind and butter together until well blended. Add sugar gradually and cream together until light and fluffy. Add egg yolks and beat well. Add lemon juice, flour, grape nuts and milk, mixing well. Mixture will look curdled, but this will not affect finished pudding. Fold in egg whites. Turn into well greased baking dish and place in pan of hot water. Bake 325 for 1 hr. 15 min. When done pudding has cake like layer on top with custard below. Serve warm or cold with whipped cream or lemon sauce.

Lemon Sauce:
Mix flour and sugar, add juice of lemon and eggs. Pour water over mixture and cook in double boiler until thick. Stir while cooking to keep lumps from forming. Serve over grape nut pudding . Also great over bread pudding.
