1/2 cup ground coffee beans
1 3/4 cup cold water
1/4 cup Kahlua, divided
1/2 cup (3 1/2 oz) marscarpone cheese (or substitute regular cream cheese)
1 (8 oz.) block fat free cream cheese, softened
1/3 cup packed brown sugar
1/4 cup granulated sugar
24 ladyfingers (or substitute Keebler vanilla wafers--2 boxes)
2 tsp. unsweetened cocoa, divided

Brew coffee to make 1 1/2 cups (or get fresh espresso from a coffee shop). Combine coffee and 2 T. Kahlua in a shallow dish and cool. Combine cheeses in a large bowl. Beat at high speed until smooth. Add sugars and 2 T. Kahlua and beat again until well blended. Split ladyfingers in half lengthwise. Quickly dip ladyfingers or cookies in coffee mixture. Place dipped sides down in 8 inch square baking dish, slightly overlapping. Spread half of cheese mixture, then sprinkle with 1 tsp. cocoa. Repeat procedure to make a second layer. Cover with plastic wrap and chill at least 2 hours.

The original recipe is from a 1999 issue of Cooking Light. I had this at a dinner party with the substitutions--it was excellent. A bit involved, but a memorable dessert.
