1 - cup molasses
½ - cup water
2 - 15 oz. packages of raisins
2 - 1 lb. packages candied fruit
1 - cup butter
1 ¼ - cup sugar
6 - eggs
2 ¼ - cups all purpose flour
1/.4 - teaspoon baking soda
½ - teaspoon cinnamon
½ - teaspoon ground cloves
1 ¼ - teaspoon nutmeg
¾ - teaspoon all spice
½ - cup orange juice or brandy
3 - cups chopped walnuts

Blend molasses and water in a large deep sauce pan. Place over low heat and stir constantly until liquid comes to a boil. Add raisins and bring to a boil again. Reduce heat and simmer covered for 5 minutes. Remove from heat and stir in the candied fruit. Reserve the mixture. Cream the butter with sugar until light and fluffy. Blend in the eggs one at a time. Sift flour with baking soda and spices. Add to blended eggs and butter mixture and beat, alternating with orange juice or brandy. When thoroughly blended, pour the mixture from the mixing bowl into the sauce pan mixture(raisins, candied fruit) and stir until all are thoroughly mixed. Stir in the chopped nuts. Turn the final mixture into 2 waxed paper lined 9” x 5” x 3 “ loaf pans, or a waxed paper lined 10” tube pan,. Bake at 275 degrees (moist heat) oven. Bake the loaf pans for 3 hours, or the tube pan for 3 ½ hours. Makes two 3 ½ lb. loaf cakes or one 7 lb. tube cake.
I wrap mine when cool with aluminum foil and place in the freezer. They last all year. After defrosting, they will keep in the refrigerator for months and they will stay moist and tasty.
