½ - cup dry red wine
¼ - cup vegetable oil
3 - tablespoons white vinegar
1/3 - cup chopped green onions
¼ - cup chopped green peppers
1/3 - cup chopped celery
1 - .7 oz. envelope Italian or garlic dressing mix
1 - 5 to 7 lb. boneless rib eye roast.

Combine the first seven items mixing well. Place the roast in a shallow dish, pour the wine mixture over the roast. Cover and let marinate for 8 hours, turning occasionally. Remove from the marinade and discard the marinade. Bake in a shallow pan at 325 degrees for two hours or until the internal temperature reaches 140 degrees for rare, or 160 degrees for medium.
