2 - cups toasted Diamond Walnuts, divided
4 - cups of cooked turkey, small pieces
½ - cup butter
2 - tablespoons finely chopped onions
¼ - teaspoon hickory smoked salt
½ - cup mayonnaise

Directions:

Grind 1 ½ cups of the toasted walnuts with the turkey using the fine blade of the grinder. Combine with the remaining ingredients. Beat until thoroughly blended. Cover and refrigerate to blend the flavors. Pile into a serving container. Chop the remaining ½ cup of toasted walnuts and sprinkle over the pate.
To toast walnuts: Spread the kernels evenly in a shallow pan. Bake at 350 degrees, stirring often for 12 to 15 minutes, or until golden brown. Cool.

A mixture of toasted walnuts and smoked turkey used as a pate on cocktail rye bread. From a rating of 1 to 10, this is definitely a 10.
Hint: I have found that if made twenty-four hours in advance, the flavors are more pronounced.
