1 - 3 lb. boneless Pork Loin Roast
1 - cup chopped parsley
¼- cup chopped onions
6 - cloves of chopped garlic
¼ - cup lemon juice
¼- cup olive oil
1 - teaspoon dried oregano
1 - teaspoon crushed red pepper
1 - teaspoon salt
½- teaspoon black pepper

Directions:

Place the pork in a self-sealing bag. In a blender, pulse parsley, onion, and garlic until minced. Add the remaining ingredients; process to blend. Add the mixture to the bag; seal and toss to coat the pork. Refrigerate overnight. Preheat the oven to 500 degrees F. Remove the pork from the bag and discard the marinade. Place the pork on a wire rack inside of a roasting pan; bake for 15 minutes. Lower the temp. to 325 degrees; continue cooking until internal temperature reaches 155 degrees, about 1 hour. Let stand 10 minutes before slicing. Perfect entrée for large crowds.
