3-1/2 c. broccoli, chopped
1 medium onion, chopped
1 can cream of mushroom (undiluted)
8 oz. mushrooms, sliced (optional)
1 c. French fried onions
1/2 tsp. pepper
1/2 tsp. salt
2 c. Velveeta cheese, chunked
2 c. cooked rice

Directions:
Directions:
Steam broccoli in steamer or saucepan and drain. Cook rice as directed. Combine all ingredients (except 1/2 c. French fried onions) in large greased casserole dish. Bake at 350º for 40 minutes. Remove from oven, stir & top with remaining French fried onions. Bake for 5 more minutes or until onions are golden brown.

I've also made this recipe using 2 pkg's of frozen mixed vegetables instead of broccoli.
