1/2 c. butter, softened
1 c. sugar
2 tsp. vanilla
1/4 c. flour
1/8 tsp. salt
1-1/2 c. quick-cooking rolled oats
1/4 c. powdered sugar (optional)

Directions:
Directions:
In large bowl, cream together butter, sugar and vanilla. Stir in flour and salt, mixing until just combined. Add oats and gently mix.
Spray cookie sheet with vegetable spray. Place level tablespoons of cookie mixture onto cookie sheet, approx. 3" apart (cookies will spread during baking). Place a piece of parchment paper over cookie balls; using bottom of glass, gently press each ball to form 1½-inch rounds, then carefully remove parchment paper.
Bake at 350º for 11-13 minutes or until cookies are golden brown. Remove from oven; cool cookies on cookie sheet for 1 minute. Carefully transfer cookies to cooling rack or towel.
Sprinkle powdered sugar over cooled cookies (optional). Store cookies between sheets of parchment paper in airtight container at room temperature for up to 1 week.
