4 to 6 Medium Potatoes
1 lb. Vegetarian Ground Beef
1 Onion, chopped
1 Large Clove Garlic (or more, to taste), chopped
8-10 Oz. Frozen Mixed Vegetables
1 15-oz Can Tomato Sauce
1/2 Lb. Grated Cheddar Cheese (or more)
Herb Salt (to taste)
Salt & Pepper (to taste)
Tamari or Soy Sauce - about 1/4 Cup or to taste
Paprika
Butter, margarine, or milk for mashing potatoes

Preheat oven to 350º (preferred method) or microwave can be used.

Wash and cube potatoes, put into a pot and cover with water. Bring to a boil and simmer 15-20 minutes or until tender.

While the potatoes are simmering, melt 2 Tbsp. butter or oil in a large skillet and saute onion and garlic for 5 minutes. Add frozen vegetables and saute 5 minutes. Add tomato sauce and vegetarian ground beef. Season with herb salt, pepper, and tamari, and let simmer while potatoes are cooking.

Drain potatoes and mash, adding salt & pepper, butter or margarine (optional), and milk to taste.

Spoon half of "meat" mixture into bottom of 9"x13" baking dish. Sprinkle with half the cheese. Carefully spread mashed potatoes over entire top. Sprinkle with remaining cheese. Sprinkle with paprika (the more paprika, the better the flavor).

Bake at 350º for 30 minutes, or microwave 15-20 minutes, or until hot and bubbly. Let cool a few minutes before serving.
