1 10oz package frozen chopped spinach, thawed
1 can artichoke hearts, drained
3 tbsp. butter
3 tbsp. all-purpose flour
2 c. milk
Salt
Cayenne pepper
1 tbsp. garlic
1/2 c. grated Parmesan (about 2 ounces)
1/2 c. grated Monterey Jack (about 2 ounces)
1 c. chopped onions

Directions:
Directions:
Preheat oven to 400º.
Combine butter and flour in a saucepan over medium heat. Cook for 2 minutes. Whisk in milk and bring liquid up to a boil. Season the liquid with salt and cayenne. Simmer liquid for 5 to 6 minutes, or until the liquid is thick and coats the back of a spoon. Remove sauce from heat and stir in cheeses. Set sauce aside. Saute onions and then stir in spinach. Add garlic and artichoke and saute for 2 minutes. Season the vegetables with salt and cayenne. Combine the vegetables and cheese. Bake the dip for 10 to 15 minutes, or until the top is golden brown.
