2 packages frozen spinach
2 tbsp butter
2 tbsp flour
2 tbsp onion, chopped
1/2 c. evaporated milk
1/2 tsp pepper
3/4 tsp celery salt
3/4 tsp garlic salt
1 tsp Worcestershire sauce
6 oz roll of jalapeno cheese, cut into small pieces
cayenne pepper to taste
bread crumbs to cover

Directions:

Cook spinach according to package directions. Drain, but reserve 1/2 c. of spinach liquid. Melt butter over low heat. Add flour to blend, not brown. Add reserved liquid slowly, stirring constantly until smooth and thick. Add all seasonings and cheese. Stir until cheese is melted. Mix with spinach in casserole dish. Sprinkle with bread crumbs before baking. Bake in moderate oven (350º) to set and brown bread crumbs. May be made the night before and freezes well. Will become spicier the longer it sits before baking.
