2 1/2 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp ground ginger 9optional)
1/2 tsp salt
1/2 cup (1 stick) unsalted butter
1 1/2 cups granulated sugar
1 cup canned 100% pumpkin puree
1 egg beaten
1 tsp vanilla extract
1 1/2 semi-sweet chocolate chunk or large morsels
1/2 walnuts or pecans (optional)

preheat oven at 350º
line two baking sheets with parchment paper
in a bowl combine flour, baking soda, baking powder, cinnamon, nutmeg, ginger and salt
using a mixer, cream butter and sugar on medium speed until fluffy (don't skimp on this step...it makes cookies light and airy)
add pumpkin, egg and vanilla beat until blended
mix in dry ingredients and beat until combined
stir in chocolate chunks and nuts
drop heaping tablespoons 2 inches apart on the baking sheets
bake 15 to 18 minutes
rotate the sheets halfway through baking to ensure even baking

I took some of my kids favorite tastes and combined these to make a delicious cookie...they are soft, very rich and difficult to stop eating. Great with coffee, hot chocolate, or a big glass of milk.
