Pastry:
1/2 c. water
1/4 c. butter (not margarine)
1/2 c. flour
1/2 tsp salt
2 eggs, room temperature
Filling:
1 c. pan seared Digby scallops, chopped
1 bacon strip, cooked & diced
1/4 c. celery, diced
1/8 c. onions, diced
2 sm. radishes, finely diced
1/4 c. mayonnaise
1 tbsp lemon juice
1/8 tsp pepper
Pinch of garlic powder

Directions:
Directions:
Preheat oven to 375º F.

In sauce pan add water & butter. Bring to a boil. Stir in flour & salt until mixture forms a ball. Remove from heat. Beat in eggs until mixture is smooth.
Drop by rounded teaspoonfuls on baking sheet, 2" apart.
Bake 25 min. or until golden brown. Remove from oven. Let cool. Cut tops off puffs & set aside.

Mix together filling ingredients. Fill puffs. Replace tops.

Don't have time to make puffs. Fill cherry tomatoes, spread on crackers, make mini sub bites.
