1 cup sliced fresh mushrooms
1 onion chopped
1 pgk (10oz) frozen chopped spinach, thawed, drained
4 eggs
1/3 cup milk
1/3 cup miracle whip dressing
1 cup shredded mozzarella cheese
1 DEEP DISH pie crust
4-6 slice cooked bacon

heat oven to 375

Cook Bacon until done however you like; chop set to side

Cook mushrooms and onions in large nonstick skillet in butter until crisp tender, (or a little longer to carmalize the onions YUM!) Remove from heat and stir in the spinach.

Beat Eggs, milk, and dressing in a medium bowl with whisk until well blended. Add spinach mixture and cheese add bacon now too. Mix well and pour into crust.

Bake for approx 50 min or until center is set and top is golden brown.

This is a great meal for anytime. I usually make this for work parties and always have to make 2 it goes!!! I love this for breakfast lunch or dinner! It's even good cold!
