1 1/2 lb. ground elk meat
1 1/2 lb. link elk sausage
4 lrg. yellow onions, diced
4 (10 oz.) cans tomato sauce
2 (14.5 oz.) cans Italian-style stewed tomatoes
2 (15 oz.) cans kidney beans, drained
2 (4 oz.) cans diced green chills
3 Tbsp. chili powder
1 Tbsp. ground cumin
2 tsp. dried oregano
2 tsp. salt
2 tsp. black pepper
1 cup brown sugar

Directions:
In a large deep skillet over medium heat, cook the elk meat with onion until evenly brown. Pour the tomato sauce, stewed tomatoes, kidney beans and green chilies into the skillet with the meat, and stir to blend. Season with chili powder, cumin, salt, pepper, oregano and brown sugar. Cover, and simmer over low heat for at least one hour.

After browning the meat in the skillet we put it all in the slow cooker. Ready in 1 hr. and 30 min. Always a great hit at Church or Scout functions.
