10 corn tortillas, divided
1 pound of lean ground beef
1/2 cup of onion, finely chopped
6 cups of chicken broth
1 can (14 oz) of whole peeled tomatoes, chopped and undrained
1 can of whole Kernel corn
1 can of cream style corn
1 1/2 cup of American cheese, shredded
2 tsp of ground cumin
2 tsp of salt
1 tsp pepper
1 clove garlic, minced
1/4 cup of clilantro, chopped (optional)
Avocado, chopped

Directions:
Directions:
1. Cut Tortillas in 1 x 3 inch strips.

2. In a small skillet, heat oil and cook ˝ tortilla strips until crisp.

3. Drain on paper towels.

4. Brown ground beef with onion and drain.

5. In large saucepan, combine broth, tomatoes, corn, cheese, cumin, salt, pepper and garlic.

6. Bring to a boil; reduce heat and simmer 15 minutes.

7. Stir in ground beef mixture and uncooked tortillas.

8. When serving, garnish with fried tortillas, cilantro and chopped avocado if desired.
