2 1/2 cups expresso or strong brewed coffee
1/2 sugar
1 tsp. vanilla
whipped cream

Chill a bread loaf pan in the freezer. Pour hot coffee in a bowl and add sugar. Mix until dissolved. Mix in vanilla and let cool to room temperature. Pour coffee in to the bread pan that was put in the freezer to chill., cover with aluminum foil and freeze until ice crystals start to form around the edges, about 2 hours. Do not let the mixture freeze through.

With a fork, scrape the ice crystals into the center of the pan, cover, and return to the freezer. Scrape the ice crystals every 45 to 60 minutes until all the liquid has frozen into ice crystals.

Scoop into small dessert dishes, top with whip cream and enjoy!!
